A seven-year-old's passion in the Catskill Mountains has blossomed into Colorado's premier destination for authentic New York bagels. Our journey spans decades of dedication, traditional training, and an unwavering commitment to excellence.

Childhood Inspiration

Growing up in the Catskill Mountains, authentic bagels were a rare treasure. Everything changed during visits to Long Island, where I witnessed the artistry of hand-rolled, kettle-boiled bagels crafted the traditional New York way.

Early Dedication

At sixteen, I began my apprenticeship in a bagel shop, hand-rolling and baking before and after school. It was during this formative time that the name 'Royalty Bagels' was born, destined to become our legacy.

New York Mastery

Moving to New York City, I worked alongside master bagel makers, helping establish four shops from conception to completion. Each experience deepened my understanding of this timeless craft.

French Culinary Institute

Advanced training at the prestigious French Culinary Institute expanded my expertise in pastry and baking arts. This classical education refined the techniques that define our exceptional offerings today.
